Method
1.Wash and soak the rice for 20 mins. Meanwhile,slice the onions and slit the green chilli.
2.In a Kadai, heat oil + Ghee and add all whole garam masala listed above. Saute for few seconds.
3.Add sliced onion,green chilli and ginger garlic paste. Saute till onion becomes translucent.
4.Now add the chopped veggies,kashmiri chilli powder and salt. Stir well and close the lid. Cook till veggies becomes soft. Do not over cook.Do not add water. Switch off the flame.
5.Transfer from kadai to the rice cooker and add the soaked rice. Add 3 cups of water. Check for salt and set the rice cooker. Wait until its done and pluff you veg pulav with fork. Yummy easy veg pulav is ready to serve. We had with aloo masala. Goes along with raitha too.
Notes
1.Do not over cook the veggies. Let it stand for 4-5 mins for cooking.
2.You can also do in pressure cooker. Same process saute everything and add rice and water.Place the whistle and let it cook for 15-20 mins in simmer. Do not whistle it.
3.Water ratio 1:1.5. Adding kashimiri chilli powder is optional. My pulav tasted yummy by adding mild spice.Do not add normal chilli powder
