Ingredients
For cake
All purpose flour/Maida

Orange juice or lime juice or pine apple juice

Vegetable oil

1 ½ cup

For Syrup
Butter
|
½ cup
|
Granulated sugar

¾ th cup
|
Vanilla essence
|
1 Tsp
|
Thick buttermilk
|
½ cup

Orange juice
|
¼ cup

Baking powder

Method
1.Lets gather all the required ingredients to make a cake. Before than lets pre heat owen to 325 degree F.
2.In a large bowl add eggs,sugar,salt,baking powder,vanilla essence and beat gently. Then add cinnamon powder,vegetable oil and orange juice. Whisk for a while.
3.Sift the flour and add gently little by little. Use the hand beater and beat until batter is mixed well.
4. Now add the chopped apple,cashew and grated cononut. Mix thwm gently with the spatula. Make sure you mixed completely
5.Grease the bundt pan with butter generously. Pour the batter carefully and level it with spoon or anything.
6.Place in Owen and bake for 1 hour 30 mins..
Now lets prepare sugar syrup
1.In a deep sauce pan melt butter.
2. Add sugar,vanilla essence,buttermilk,orange juice and baking powder. Stir continuously
3.Stir until it reaches boiling point. Let it stand for 5 mins.
Pour the prepared sugar syrup on the top of the cake and reserve half syrup.Let it rest for 2 hours.Allow it to cool completely.
After two hours turn the cake upside down carefully. Place on the cake board and pour the remaining sugar syrup on top it. Beautiful sugar glazed coconut apple bundt cake is ready. Put it in freezer for overnight and serve chilled.
Notes
1.Bake for 1 hour 20 mins first. Check whether cake has done. If you need more crusty then bake for another 10 mins. Do not worry if your cake burnt or color turns dark. This apple cake should be crust like.
First time i baked this cake for 1.30 mins and believe me my cake was yummy ,crusty and more tasty. Since my cake for little dark and can't shoot photos. So this time i baked 1 hour in 325 degree F and 1/2 hour i baked in 250 degree F. I achieved the color and beautiful bundt shape but my cake was not crusty. Cake tasted good. Though my last time baked coconut apple cake was burnt little bit the taste was hmmm.. yummy!.mouthwatering . I would prefer to bake for 1 hour 30 mins for sure. Crusty Apple cake ! Always serve chilled.
For making concentrated orange or pineapple juice : First boil orange or pine apple with required amount of water. cool it and blend it.
