Veg Brinji (Without mint)

Ingredients

Seeraga samba rice-2 cups
Potato-2 no cubed
Carrot-1 no
Green chilli- 4 no slit
Onion- 1 sliced
Tomato-1 chopped
Ginger garlic paste- 1tsp
Coriander leaves- handful
Whole garam masala
Biriyani masala-2 tsp
Curry powder-1/2 tsp
Coriander powder-1/2 tsp
Salt
Oil
Ghee- 1 tsp
Water-3 cups


Whole gram masala  includes

Bay leaf – 1 No.
Cinnamon – 1 inch piece
Kal paasi – 2 Nos
Cloves – 2 Nos
Cardamom  - 2 Nos.
Fennel seeds-1/2 tsp



Method

1.Wash and soak rice for 20 min. Keep aside.
2.In a cooker heat oil+ghee and add whole garam masala. Saute for a min.Now add chopped onions,green chilli and ginger garlic paste. Stir till raw smell goes off.
3.Add the veggies of your wish and tomato. Cooked for few min.
4.Now add biriyani masala,curry masala ,turmeric powder and coriander powder. This stage add 1 tbsp of curd.Add water and allow it to boil for 2 min.
5.Put salt in boiling water and add the soaked seeraga samba rice. Stir well and close the lid.
6.Slow cook in simmer for 20 min. after 20 min open and add finely chopped coriander leaves. Stir slightly and serve hot with raitha.

Note


  • No need of adding mint leaves. If you want u can add.
  • Check the water ratio. If u cook in electric rice cooker add 1:1.5 ratio. In cooker 1:1 is enough,because rice is already soaked for 20min. 
  • I cooked in pressure cooker for 20 min in simmer. Add 1:1.5 water ratio. While opening i found some excess water on top. But wen i mixed all water absorbed and it was perfect veg brinji. So u can try with 1:1 ratio or 1:1.5 ratio of water level.
