Kesari is all time favorite. That too pineapple kesari or any fruit kesari will sure remind us marriage breakfast. This is my style of doing pineapple kesari.Love the flavor.
Ingredients
Pineapple

Rava/Sooji

Method
1.In a pan heat oil and ghee. Roast the raisins and cashew. Switch off the flame. Transfer to a bowl
2.Roast the rava. In a cup of water add the chopped pineapple and let it to boil for 5 mins in medium flame.
2.Add 1/2 cup sugar in the boiling pineapple. Meanwhile heat the remaining 1 and half cup of water. Heat until reach its boiling point.
4.Transfer the cashews and raisin along with the ghee and oil it. Now add the roasted rava too. Give a stir. Add food coloring at this stage.
5.Add the hot water,pinch of salt and food color. Give a continuous stir. Finally add remaining sugar. Kesari should be loose.
6. Finally add tutty fruity. Garnish with cardamom and saffron.
Pineapple kesari ! :)
2.Can also add few drops of pineapple essence.
3.Sugar can be reduced to 3/4 th cup
4.Adding tutty fruity is optional.
5.Adding extra water will make your kesari loosen and soft.
5.Add the hot water,pinch of salt and food color. Give a continuous stir. Finally add remaining sugar. Kesari should be loose.

1. I added a Tsp of ghee finally.2.Can also add few drops of pineapple essence.
