Method
1.Sift maida and keep aside.2.In a bowl first smash the banana and add sugar into it.
3.Beat the Egg and melt the butter. Keep aside.
4.Now add the beaten egg and melted butter into the bowl. Beat for 2 min.
5. Fist add half quantity of maida,vanilla essence,baking powder,baking soda and a pinch of salt. Beat for another 5 min. Later then add left over maida and beat well for 5 min.
6.Add the chopped nuts and mix well with spoon.Add cinnamon powder too and mix well.
7.Arrange the muffin cups in the baking tray. Spray some oil into it. Pour the prepared batter into the muffin cup using spoon.Spring some nuts on the top of batter.
8. Put the muffins in the oven and immediately reduce oven temperature to 350 degrees F. Bake until golden brown, about 20 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Turn the muffins out of the pan and cool on the cooling tray. If not,Keep in room temperature for 10 min. Serve warm or at room temperature.
9.Spongy banana muffin is ready at our home.. Your kids will love this. Try and share your comments.
This batter preparation yields 11 large banana muffins.
Note
1.Adding salt is completely optional.2.Always use butter and egg at room temperature.
3.You can use egg beater to beat the batter. Initially i was doing with egg beater, later i got hand beater.
4.You can try this in our microwave Owen too. Same process. Just bake for 8- 10 min. Check in between.
